In situations like these, it’s time to call for backup. With so many dishes to complete and so many cooks in the kitchen, it can be hard to coordinate a time for all the dishes to be completed without something inevitably getting cold. On top of that, by the time everyone finishes their first plates and contemplates if they have room for seconds, what may not have been cold before may very well now be. The solution to this, without leaving the oven on or lining up by the microwave, is to keep everything warm and ready to eat in chafing dishes. These dishes work by lighting a small sterno fuel can under a pan of water which heats evenly, gently distributing just enough heat to the food pan above it to keep the food warm without continuing to cook or burn.
